Just a handful of ingredients will have you doing the happy food dance as you scoop up spoonful’s of this yummy mug cake. It’s easily customizes, for example add in extra chocolate chips or leave them out all-together, drizzle chocolate overtop, add a layer of chips in the middle for a gooey center or add a scoop of whipped cream or ice cream. The options are plenty.

Make this directly in your mug or, do as I do and make it in a small bowl and they transfer it (that way I don’t end up with streaks on top of the mug as I mix it that may cook onto the mug).

Ingredients

  • 2 TBS sugar
  • 2 TBS brown sugar
  • 1 egg
  • 2 1/2 TBS oil (vegetable oil, olive oil or substitute apple sauce)
  • 3 TBS milk
  • 3 TBS peanut butter
  • 1/4 cup flour
  • 1/4 teaspoon baking soda
  • 2 TBS or more of chocolate chips

Instructions

  • Spray a large mug (16oz) with cooking spray (or two 8oz mugs).
  • In a small bowl, combine all ingredients and mix until smooth
  • Place batter into one large mug or two smaller mugs and cook for 1 minute 15 seconds in the microwave) If you feel you need longer, place it back in another 10 seconds. If batter is split, a minute should do it in most microwaves. Cook each mug separately.
  • Enjoy as is or top with additional chocolate chips, a drizzle of chocolate, Nutella, frosting or whipped cream.
